Dinner for One

Eating alone is fine, but cooking for one is sometimes a problem. I don't think I'd cooked a real meal since returning from my trip until tonight. I often make what I'd be making anyway, either in smaller batches or ending up with leftovers. Eating the same thing every night doesn't bother me either, but I usually change is up a little. For example, I'll make chili at the beginning of the week. The next night I'll have it over rice, and the next I might make a salad from it. Tonight I went a bit above and beyond what I would do for myself -- nothing fancy, just a few extra minutes. I marinated some lean pork chops in teriyaki sauce all day (while I was out with a friend at our local home and patio show), grilled it (I can't remember the last time I lit the grill!), steamed some rice, and sauteed mushrooms with spinach. I did have rice and pork left over -- I tried to get the veggies in first -- which I'll probably use for fried rice tomorrow or the next day.

None of this is very interesting, I'm sure, but my class starts tomorrow night; I don't want to write about that even though it's holding my focus. I've done most of what I need to to get ready. I always have first-day jitters no matter how long I do this. I know it will all be fine, but I'll be more relaxed in just under twenty-four hours from now when I have one meeting under my belt.
