Crockpot Turkey Breast? Yes, Please!

Not once in all of my turkey-cooking years had I thought about cooking a breast in a crockpot. But I bought one a few days ago and it has been thawing in my freezer. My schedule this week is such that I can't roast it the traditional way, so I thought I'd look up a recipe online for doing it in the crockpot. And what do you know? That's actually a thing. I found lots of recipes, but the one I'm going with is super-simple. It calls for some celery stalks and onion chunks in the bottom of the crockpot and some spices rubbed under the turkey skin. Then it's just a matter of cooking on high for an hour (which I'll do before I leave for my new midday class) and turning the cooker down to low for five to seven hours. My second class on Mondays and Wednesday is over just before 8:00 p.m., so I'm not especially motivated to cook an actual meal afterwards. However, I'm trying really hard to stick to high-protein/low-carb eating. Imagine how amazing it will be to come home tomorrow after a long day to a moist, delicious turkey breast waiting for me to devour it! I've had a busy day today and haven't eaten much; my mouth is watering as I write this and think about tomorrow's dinner. For tonight, I'm going to make a sandwich from a leftover chicken breast, sliced tomato, spinach, and cheese. I'll have some fruit on the side. I'm stunned to have discovered that I can skip my evening chocolate and survive! Low carb is hard, but I do want to get this weight off and I know it's a quick method. After I get a week of this eating style under my belt, I'll move on to lots of exercise next week. I'm feeling pretty proud of myself, even if it has been only three days.
