Now We're Cookin'!

I'm sure this entry is predictable, given how happy I am to have my kitchen back. However, my stocks are low; I just didn't have anywhere to put anything, so I wasn't buying anything. I don't use a lot of packaged food in general, other than maybe canned beans and boxed pasta. The alternatives are more trouble than they're worth, especially if I'm busy. I had taken some chicken out of the freezer yesterday to thaw for tonight, but I wasn't sure what I would fix with it. What I ended up making was delicious, and best of all it wasn't microwaved or carried out. It was fresh and homemade and simple and awesome.

I cut each of two chicken breasts into four pieces, sliced some onions and peppers, and chopped Celebration Blend potatoes (the little various-colored ones). I put everything into a pot with olive oil, added basil, salt, and pepper. At first I turned the heat up high and let all the flavors release and mingle. Then I turned it down and put a lid on it. When the potatoes were mostly cooked, I took the lid off and turned the heat up again so the onions could caramelize and the chicken bits at the bottom of the pot could get crispy. When it was all done, I plated up half of it and generously grated fresh parmesan cheese over it. I finished it off with some freshly-ground pepper.

These are my favorite kinds of meals, the ones I make up on the spot with few ingredients that turn out to be fantastic. At the moment, the pan and plate are soaking in the sink (not in the bathtub). In a few minutes, I'll put them in the dishwasher and wipe down the counters. I'm enjoying this a lot.
