Sudden Comfort Food

With today's dismal weather, I was feeling the need for some warm and filling comfort food. However, this morning I stepped on the scale for the first time since my vacation and that curbed my appetite a bit. So I compromised; I made something quick, easy and fairly healthy with what I already had on hand. It was so good I wish that my blog was in taste-o-vision and I could give you a bite. Instead, I'll give you the recipe. I went a little crazy with alliteration in naming the dish. Oh, and don't worry too much about the amounts. It's an adjustable recipe. These measurements make two servings.

Papas con Pollo, Pequins y Parmesan

2 tablespoons butter or olive oil
2 medium potatoes, peeled (or not) and cubed
1 small onion
2 cloves garlic
2 pequins (small dried red chiles), crushed
1 large boneless, skinless chicken breast, cooked and cubed (or 1-2 cups leftover chicken)
2 tablespoons water or chicken broth
salt and pepper to taste
parmesan cheese
lime wedges (optional)

Heat butter or olive oil in shallow pan. Add potatoes, onion, pequins and garlic and cook about five minutes over medium heat, stirring to coat everything with butter or oil. Lower heat and add chicken. Stir well. Add water or broth; cover and cook on lowest heat for twenty minutes. Poke potatoes with fork to check for doneness. (If you want crisper potatoes, cook without the lid.) Sprinkle with salt and paper, shred some parmesan on top, and finish with a squeeze of fresh lime.
