I promise not to turn my blog into a food diary, but I had to laugh at myself a little today. So far this week I've done a good job of getting in my five fruits and vegetables per day. (I counted Monday, when I was in the hospital, because I had plenty of both.) Yesterday I did a small cheat by drinking a Naked green drink; it had two and a half servings of vegetables and one and a half of fruit. I did have additional items to exceed my quota, and I started off today with the best intentions -- and actions. I made oatmeal with a whole apple cut up and cooked with it, along with a serving of golden raisins. That was good. But then I skipped lunch. Skipping meals is always my downfall. Some days I don't eat until three in the afternoon. That isn't healthy, I know, and is really bad for keeping a steady level of blood sugar.
So mid-afternoon I saw that I had a spinach pizza in the freezer. It was thin-crust, not so bad. That, with a peach, put me within my calorie budget (although technically I'm not counting this week, just working on "my five"). Then I wanted something sweet. I don't keep junk food in the house, so usually if I want something I have to at least expend the energy to go to the store for it. I wasn't that ambitious. But my pantry came to the rescue -- or to my detriment, as the case may be. I had pureed pumpkin and evaporated milk, so I whipped up a pie. I made it my usual way -- less sugar, no crust -- that I do when I'm not cooking for a holiday meal. It's cooling on the counter now. Maybe pie isn't the most nutritious food, but the calories are scaled way back, it has no oil and very little sugar, and best of all pumpkin is a vegetable, right?
