Fall Family Favorite

When my sons were young, I used to make this dish a lot. I don't think I ever gave it a name; it was something I threw together and, since everyone enjoyed it, I made it again and again, especially in the fall. We lived in an area with many apple orchards, so I changed up the kinds of apples I used and at some point added cider -- not necessary but it does add flavor. I like it because it's sweet and savory, a result of the perhaps odd combination of ingredients. I haven't made it for a long time, but I've been thinking of it this week as the weather has cooled down. Cornbread and spinach make nice side dishes in addition to (or in place of) the noodles. I guess I need to call it something!

Apple and Onion Smoked Sausage

1 package smoked sausage or turkey kielbasa
1 large sweet onion, sliced
3 medium apples (any kind will work, but I like to use Fuji or Granny Smith, or a combination), sliced
1 cup baby carrots, whole or sliced
1/2 cup apple cider
dash cinnamon
dash nutmeg

Diagonally slice sausage into half-inch pieces. Place in large skillet and add remaining ingredients. Cook over medium heat, stirring occasionally until apples and onions begin to soften. Serve over lightly buttered egg noodles.
