Easiest Ever Homemade Candy

From the recipes I've posted here, it would be easy for one to assume that all I cook is high-calorie, high-fat food. That's not the case. Usually when I cook, especially for myself, I keep it simple -- a few fresh, high-quality ingredients combined in sometimes unusual ways. Yesterday, for example, when my son and his girlfriend came to lunch, I made grilled chicken breasts (seasoned with only salt, pepper, and garlic) and insalata caprese (slices of fresh mozzarella and tomatoes with basil and balsamic vinegar) -- a simple meal that was also delicious. Those kinds of dishes are terrific, but they don't lend themselves to a full recipe blogpost. Many of the recipes I share here are things I make only for special occasions. This candy, for instance, is a big hit at Christmas; I can just barely make them fast enough for my clan to eat them.

You'll need just three ingredients, although you can play around with two of them to make different flavor combination. I haven't named them, but I guess you could call them Oreo Truffles. And you should probably plan on doubling the recipe.

1 package Oreos (any flavor will work)
1 8 oz. package cream cheese, softened
1 bag chocolate chips (you can use any other kind of candy chips that can be melted, like white chocolate or peanut butter)

Line a cookie sheet with parchment paper. Mash Oreos in a large bowl. (You can do this in a food processor, but the truffles will have less texture.) Add cream cheese and mix well. Roll into balls. Melt the chips in the microwave or a double boiler. Dip the rolled balls into the chocolate, making sure to fully coat them, and place on the cookie sheet to set. Store in the fridge once the chocolate is set.
